Back to school breakfast ideas: Apple jacks (no, not the gross cereal!!)
Hooray for Back to School and back to routine…can I get an AMEN??!!
Seriously, though, the summer seemed way too short (it seemed like 3 weeks of decent weather…) but here we are in September. If you are like our family, we thrive on routine. However, mornings can get pretty hairy and I’m always looking for quick, nutritious breakfasts to make for the kiddos.
This one is a hit and I hope you love it as much as we do. (They are also great as “bread” for sandwiches in lunchboxes with a little cream cheese spread inside!).
APPLE JACKS
Ingredients:
Premade pancake mix (we like President’s Choice Blue Menu Whole Grain Pancake Mix)
3 Apples (cored and sliced)
Directions:
Make the pancake mix according to directions
After heating a pan with oil, dip each apple slice in the pancake batter.
Fry pancakes (about 1.5 minutes per side) until golden.
Serve hot with maple syrup, fresh fruit or even plain!

We do almost the same thing, we use the same mix, we just put them in mini muffin tins and stick the apples in so they protrude and sprinkle cinnamon and sugar on it. Yummy breakfast!
Takes me back to my childhood…we called them “apple fritters”, not sure if that’s a misnomer or not. Thanks…I will try these!
